Fluffy Baked Cake Donuts

This is so exciting! My first recipe blog post and we’re making donuts! When you think of clean eating, typically donuts aren’t the first thing to come to mind and rightfully so, normally they’re loaded with refined sugar, deep fried in greasy oil, all of the things we don’t want! I’m happy to tell you the recipe i’m about to share contains none of those things. Now you really can have your donut and eat it too!

I love this recipe so much because it is so flexible. If you’re gluten intolerant, you can substitute in a gluten free flour. If you want to limit your sugar intake, you can use stevia, just as a few examples. Well enough talk, let’s make these donuts!


• 2 cups all purpose or gluten free flour
• 3/4 cup coconut sugar
• 2 tsp baking powder
• 1 tsp ground cinnamon
• 1 tsp salt
• 3 tbsp plain or vanilla greek yogurt
• 1 cup dairy free milk
• 2 tbsp coconut oil
• 2 eggs
Glaze (optional)
• 1/3 cup earth balance or preferred butter
• 2 cups confectioners sugar
• 2 tsp vanilla extract
• 4 tbsp dairy free milk (more if needed)

• preheat your oven to 425 degrees Fahrenheit
• grease your donut pan with baking spray ( I use coconut oil spray)
• In a large bowl mix the flour, sugar, baking powder, cinnamon, and salt
• In a separate bowl combine the milk, yogurt, eggs, and oil
• With a rubber spatula combine the wet and dry ingredients (the batter will be quite think but that’s ok, if too think to combine add a splash of milk)
• Spoon the batter into an icing bag with a large round tip (a sandwich bag will also work)
• pipe the batter into the greased donut pan
• bake for about 8 minutes (the donut should bounce back when you touch it)
• flip donuts onto a cooling wire wrack allow to cool at least 5-10 minutes


• in a medium bowl mix together softened butter, confectioners sugar, vanilla extract and milk
• dip both sides of donut into glaze and place back on cooling wrack to dry

I hope you love these donuts as much as I do! My husbands favorite dessert is donuts and he is a huge fan of these. As I said before, feel free to make any substitutions you like. That is the great thing about baking and cooking, you can make it your own, everyone has their own personal touch. I will tell you my biggest secret, the most important ingredient is always love.
